Do you have banana bread fatigue? Here’s another excellent way to use up those blackening bananas on your countertop. These cookies taste even better than standard chocolate chip cookies but it’s what they don’t have that makes them so special: no oil, no flour, no eggs, no added sugar. This is the start of a guilt-free love affair.
½ cup of peanut butter
2 mashed very ripe bananas
1 ½ cups rolled oats
1 tsp vanilla extract
½ cups chopped walnuts (optional)
½ cup chocolate chips (or more and definitely not optional!)
Sprinkle tops with sea salt flakes if you want to be ever-so fancy.
Mix bananas, peanut butter, and vanilla extract
Fold in oats
Let sit in fridge for 10 minutes to allow batter to thicken
Add in chocolate chips and/or walnuts
Form into evenly sized scoops
Place on lightly greased or parchment lined baking sheet
Lightly flatten with a fork to achieve uniform thickness
Bake at 350 degrees for 12 to 15 minutes.
Let cool … then devour!
