MASCARPONE TOMATO ICE CREAM

Here’s proof that tomato is actually a fruit!

INGREDIENTS

5 plum tomatoes

½ cup sugar

½ tsp vanilla

½ tsp cinnamon

¾ cup mascarpone 

⅓ cup whole milk

2 cups good quality vanilla ice cream or frozen yogurt, softened

DIRECTIONS

Blanch tomatoes in boiling water to remove skins

Chop the tomatoes

Simmer chopped tomatoes, sugar, vanilla, cinnamon until mixture becomes syrupy, approx. 10 minutes.

Fold in mascarpone while slowly adding milk

Gradually add softened ice cream.

Freeze for a minimum of four hours.

Serve!
