Save your money while controlling your sugar and fat intake! You can make this seasonal favourite quickly and easily right in your own kitchen. Here’s what you’ll need to whip up two PSLs:
2 cups of milk (soy, almond, or oat milks will also work just fine)
2 TBSP of pumpkin purée – the stuff you make your Thanksgiving pie with.
Sugar, or sweetener, to taste
1 TBSP vanilla extract
½ tsp of pumpkin pie spice, plus extra for garnish
½ cup of espresso
Whipping cream, or foamed milk, for topping
Heat the pumpkin purée and milk together taking care to not let the mixture overheat. Stir in the coffee, vanilla extract, and pumpkin pie spice.
Divide the blended coffee and milk mixture into two heated cups – it’s always nice to heat the cups! – and top with whipping cream or foamed milk. Dust the whole shebang with pumpkin pie spice and you’re done!
You can make your own pumpkin pie spice in whatever combination you like by mixing ground ginger, allspice, nutmeg, cinnamon, and cloves. You don’t need to use all of those spices but a blend of, at least, three is a good idea.
